Every roast logged, every bag dated.
Grade roasts twelve kilos at a time in Marrickville, three mornings a week. Each batch follows a profile we've tuned for how you'll brew it, and the curve is printed on the bag.
Roasted Monday, Wednesday and Friday. Posted the same day. Free delivery over $45.
Bean temperature (solid) and rate of rise (dashed), from the roaster's own probe.
On the bench this week.
Four coffees, each bought from a farm or co-op we've worked with for at least two harvests.

Roasted for the way you brew.
Filter
A quicker roast that keeps the fruit and acidity. Dropped soon after first crack, for pour-over, batch brew and plunger.
Espresso New
A longer development so it extracts evenly under pressure and stands up to milk. Same beans, different curve.
The roast date, not a best-before
You'll know exactly how old your coffee is. Most taste best between one and four weeks off roast.
The curve itself
The printed curve is from your batch, read from the roaster's probe. Scan the code to see the full log.
Fresh coffee, on your schedule.
Choose how much and how often. Skip, pause or change coffees any time before Sunday night.

Brewing, briefly.
- Should I buy whole beans?
- If you have a grinder, yes. If not, tell us how you brew and we'll grind it for that, on the day we post it.
- Why is the roast date so recent?
- Because we roast to order. Coffee needs a few days to rest; the bag tells you when it's at its best.
